Enfants de la quatri\u00e8me g\u00e9n\u00e9ration, C\u00e9sar dirige le restaurant \u00e9toil\u00e9 Le Bois sans Feuilles et L\u00e9o est \u00e0 la t\u00eate de l\u2019un des deux autres restaurants Troisgros, la Colline du Colombier. Leur p\u00e8re Michel reste \u00e9galement pr\u00e9sent et assure une transmission en bon ordre. Le film analyse m\u00e9ticuleusement la recherche des meilleurs produits alimentaires, la pr\u00e9paration en cuisine et le service en salle.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-media-text has-media-on-the-right is-stacked-on-mobile\"><div class=\"wp-block-media-text__content\">\n<p>Tr\u00e8s vite, la question du restaurant est abord\u00e9e par petites touches, d\u2019abord par des d\u00e9tails d\u00e9coratifs, comme les baies vitr\u00e9es, le parquet d\u00e9structur\u00e9, aux lattes pas tout le temps align\u00e9es et parall\u00e8les, l\u2019agencement des cuisines et de la salle, ainsi que les allers-retours de Michel Troisgros entre ces deux espaces contigus. Les murs n\u2019ont pas de raison d\u2019\u00eatre, il faut d\u00e9cloisonner la curiosit\u00e9 en regardant plus loin, o\u00f9 nos pas peuvent nous mener tant que le sol ne se d\u00e9robe pas. En bas, la salle s\u2019inscrit dans les poncifs de l\u2019architecture moderne et de la <em>Glass House<\/em> de Philip Johnson, large verrue-v\u00e9randa sans cloisons, d\u00e9gageant la vue sur des jardins bois\u00e9s et des cultures maraich\u00e8res. Le manoir italianisant accol\u00e9 d\u00e9ploie ses ailes de fa\u00e7on ramass\u00e9e, avec des d\u00e9crochages aux hauteurs anarchiques, m\u00e9langeant les tours aux fen\u00eatres renaissance \u00e0 meneaux en pierres, vitraux en ogive moyen-\u00e2geux, sur\u00e9l\u00e9vations, arcades, extension \u00e0 la sym\u00e9trie post palladienne.
